Did you know that Psathyrella coprinoceps (commonly called djon djon) is a rare, edible, small, and delicate mushroom, dark brown to black in color, native to Haiti and the Caribbean, and often used in Haitian cuisine? It is particularly renowned for preparing a flavorful black mushroom rice dish, diri ak djon djon, which gives it a rich and deep flavor.

For the gourmet, Djon djon rice is not just a dish, it is a sensory experience. This fungus endemic to northern Haiti, Psathyrella coprinoceps, grows on dead wood trunks after the rain. What fascinates chefs is not the flesh of the mushroom — which is removed after infusion — but the dark pigment and woody aroma that it releases into the cooking water.A developed palate will detect notes of undergrowth, humus and an umami depth that international haute cuisine would not deny.

Often garnished with dried shrimp or land crabs, this dish requires perfect control of the dosage to avoid any bitterness.
